Carollo was the starting quarterback for the UWM football team from 1970-72. He was the game captain in 1971 and 1972 and most valuable offensive player in 1970. He was also Varsity Club President from 1971-73 and was later named to the "Who's Who in Collegiate Sports".

After an injury sidelined him his senior year, Carollo became assistant coach/quarterback coach. After graduating, he began officiating high school football and college games and in 1988 he officiated the coveted Rose Bowl. Then in 1989, Carollo started officiating in the NFL, moving to referee in 1997. He has also officiated numerous playoff games and two Super Bowls. In 1998, he earned the UWM Distinguished Alumni Award and the UWM Homecoming Special Recognition Award.
